A KICK OF TUMERIC GRANOLA

  • 3 cups puffed brown rice (make sure it is unsweetened with only one ingredient!)
  • 2 cups rolled oats
  • 1 cup slivered almonds
  • 2 1/2 tbsp tumeric
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tbsp maple syrup
  • spray coconut oil

  • Heat oven to 300
  • Combine all ingredients in a bowl and mix well. Be careful not to crush the rice.
  • Spread on baking pan/sheet.
  • Bake about 20-30 minutes or until golden brown, watch carefully.

Storage

  • Store in an airtight container and enjoy for a few weeks... or as long as it lasts without getting devoured!

Notes

All toasted up and ready to go!
The turmeric is not the only thing that makes this granola special. I used puffed rice for part of the grains this time. Let me tell you ... it turned out amazing! The puffed rice gives a light and airy texture that I love. The rice increases the volume of the granola overall, so this can be a great topping or just a grab-and-go handful snack.
