2tbspmaple syrupmore or less depending on your sweetness preference
1tbspolive oil
1tspvanilla
Instructions
preheat oven to 300°
Peach mash
cut up peaches into small cunks and place in a small pot
heat over med-high heat to reduce the peaches
while they are heating, mash the peaches with a fork or a masher
once they are well reduced (a lot of liquid is gone) remove from heat and mash some more to remove as many large chunks as possible
add vanilla and maple syrup to the peach mash
Combining
combine dry ingredients in a large mixing bowl (oats, puffed rice, nuts, chia seeds, salt, cinnamon)
add olive oil to the dry ingredients
pour reduced peach preserve over the mixture
spread peach mixture into dry ingredients thoroughly. You will need to use two spoons to combing the peach and the dry ingredients. Try to get an even spread, there will be some chunks with peach preserve but that is okay.
once combined, spread the granola evenly on a baking sheet
bake the granola for 40-45 minutes at 300°. Remove and toss every 15 minutes. Bake until golden brown!!
