Preheat oven to 425. Line and drizzle baking sheet pan with tinfoil and 1/2 tsp olive oil.
Wash sweet potato, and slice about 1/3 thickness. In a small dish put your 3 tsp olive oil. Lightly, brush sweet potato with olive oil on both sides. Place on one side of baking sheet pan.
Break apart or slice your cauliflower into bite size pieces. Place on baking sheet pan and lightly brush with olive oil.
Bake at 425 for about 15 min. Turn sweet potato when golden on one side. Toss cauliflower to brown on sides.
Now that the sweet potato and cauliflower are in the oven let's get the avocado ready.
Slice avocados and scoop out into a dish.
Squeeze lime juice over avocados.
Season with salt, pepper, onion powder, garlic salt and 2-3 pinches of red pepper flakes. Now mix, smash, slice, fold, however you like to mix it all up.
Once the sweet potato and cauliflower are tender to your liking, remove from oven. If you have kosher salt I like to add a pinch over the cauliflower when I take it out of the oven.
Plate your cauliflower with sweet potato on top and a spoonful of avocado mixture.
NOW.... drizzle honey over top of meal.
