Heat oven to 400 degree.
Line baking sheet with tinfoil for your zucchini boats and set aside. Get your skillet out and ready.
Hollow out zucchinis using a spoon and place on tinfoil lined baking sheet/pan.
In a skillet, combine turkey, paprika, minced garlic, pepper, thyme and olive oil. Cook until browned.
Add tomatoes, artichokes and cooked quinoa to turkey and simmer for 3 min.
Remove from heat.
Add mixture to zucchini boats.
Sprinkle nutritional yeast.
Bake at 400 for 20 minutes.
