Yes! You are seeing this right … Zucchini Boats!
I was trying to come up with a new meal prep idea one weekend. For some reason, I had been on a big zucchini kick. Zoodles, baked zucchini, for dip, even in oats. So of course I ended up with zucchini in my new creation. These are a fun new way to enjoy zucchini.
As far a meal prep goes, these are awesome. You can make them in a big batch using 5-6 zucchinis and boom … dinner for part of the week. Not to mention, they taste just as good cold or warmed up.
I think what draws me to them is that they just seem fun. I don’t know about you, but the idea of eating a boat is awesome. Not to mention your roommate will be very intrigued as to what you are eating. This means you might have to share, but that is okay because they are just that good.
Zucchini Boats
Equipment
- skillet, baking sheet/pan, tinfoil

- 4-6 Zucchinis2 T minced garlic5-6 sprigs of thymenutritional yeastcracked pepper
- 1 lb ground turkey
- 1 can fire roasted tomatoes I love Muir Organic fire roasted tomatoes
- 3/4 can artichokes diced
- 3/4 cup dried quiona follow directions on box to prepare quiona
- 2 tbsp paprika
- 1 tbsp EVOO
- 2 tbsp garlic minced
- 5-6 sprigs thyme
- sprinkle nutritional yeast, cracked pepper

- Heat oven to 400 degree.
- Line baking sheet with tinfoil for your zucchini boats and set aside. Get your skillet out and ready.
- Hollow out zucchinis using a spoon and place on tinfoil lined baking sheet/pan.
- In a skillet, combine turkey, paprika, minced garlic, pepper, thyme and olive oil. Cook until browned.
- Add tomatoes, artichokes and cooked quinoa to turkey and simmer for 3 min.
- Remove from heat.
- Add mixture to zucchini boats.
- Sprinkle nutritional yeast.
- Bake at 400 for 20 minutes.
