This is a family favorite and mixes things up a bit.  This is a great dish when you are limited on time. I absolutely LOVE, LOVE, LOVE, anything that is basically 1 PAN!  Also LOVE my made-in 12inch frying pan.  They are a game changer.

Okay, so this is your Father’s Day end of day quick treat, 4th of July individual apple pie, holiday dessert to send home to each guest, children’s sleepover late night treat!!  This is soo versatile because it is sooo easy and quick.   The hardest element

This meal is layered with flavor. You will definitely take more than a few bites! It is just…YUMMY!  Spring is upon us and this always steers my meal prepping toward lighter meals.  Now I used the air fryer for this meal because I just love the crispy-ness of the potatoes that I do not get when oven roasting.  Also for the asparagus.  Not to mention it cooks faster.  So for me I can put the potatoes in the air fryer while I am prepping the salmon.  I did try a couple of air fryers and have found my favorite because it has two racks, and does not span the length of my counter space and it is not outrageously expensive.  I am funny about my counter space. I do not like cluttered counters..  Who is with me on that.

AIR FRYER ROASTED SALMON & ASPARAGUS with CRISPY POTATOES OVER LEMON VINAIGRETTE SALAD

Ingredients

INGREDIENTS

  • 1.5 lb salmon filet
  • 2 small bags fingerling potatoes
  • 1 bunch of asparagus
  • 1 cup chopped broccoli
  • 1 container of spring mix lettuce mix
  • 2 tbsp salt, pepper, garlic powder, onion powder
  • 1 tbsp paprika
  • 1 tsp rosemary, cumin, oregano,
  • 2 tbsp avocado oil and olive oil measure out separately
  • 1 cup oikos 25 gm/6oz PLAIN yogurt
  • 1-2 tbsp sriracha sauce
  • 2 tbsp KOSHER salt
  • 4 fresh squeezed lemons
  • 1 fresh squeezed lime

Instructions

PREP INSTRUCTIONS

  • Air Fryer or Oven? Your choice. I prepared this meal using the air fryer. (I will share link for the air fryer used) If you are going to us the oven, go ahead and pre-heat the oven to 400
  • Assemble all ingredients and utensils to be used.
  • Combine - salt, pepper, garlic powder, onion powder, paprika, rosemary, cumin, oregano into a small prep dish. Set aside.
  • Place salmon on parchment paper, pat dry, brush or dab 1 tbsp avocado oil over salmon filet. Spread 3-4 pinches of seasoning mixture to salmon and gently massage into filet. CUT salmon filet with kitchen shears into 3-4 servings. Set aside.
  • Wash, pat dry, and half fingerling potatoes. Place onto baking sheet lined with parchment paper. Pat dry. Brush or spray avocado oil...LIGHTLY. Toss potatoes. 1-2 pinch sprinkle of kosher salt. set aside.
  • Wash, pat dry asparagus. Remove ends of asparagus. Place and spread out onto baking sheet lined with parchment paper. Set Aside
  • Wash/cut broccoli into desired size.
  • Wash and spin salad mixture. Place into serving dish for salad. Add broccoli to salad mixture. Set aside.

LET'S GET ON THIS

  • Your salmon is ready for the air fryer or oven. Air Fryer - 375 for 10-12 minutes or until desired temp.
  • Assemble asparagus onto baking sheet spreading out and dab with cloth to ensure asparagus is not too damp.
    Place in air fryer - 395 for 5 min. Turn if you want 2 sides browned about 2 minutes into cooking.
    Oven - place on middle rack of oven at 425 for 5 min. Remove and set aside.
    EITHER WAY - once asparagus is partially cooled, sprinkle 2 pinches of kosher salt over top.
  • AIR FRYER -Once fingerling potatoes are cut in half - pat dry. Lightly spray or brush with avocado oil. MAKE SURE POTATOES ARE NOT TOO SATURATED - or they will be too soggy. Air Fryer - 400 for 5 min. Turn potatoes after 5 min and cook for 4 more minutes at 400 or until cooked to preference.
    OVEN - same as above for Air Fryer instructions.

always a favorite in my house!  We love love love the holiday time and hot chocolate is always included with our holiday everything. There are so many, let me say it again… so many ways to make hot chocolate.  I mean you can make it with diary milk, almond milk, soy milk etc. Then you can make it naughty or nice 🙂 I mean right!!

Keeping it NICE – try to add a little cinnamon or nutmeg to the top of your hot chocolate.  Dress with a peppermint stick or better yet, a CHOCOLATE covered peppermint stick. Marshmallows are just always included!

Saturday Nite Lite Salad with Figs, Avocado, Flax Oil Salad Dressing

Ingredients

Salad Ingredients

  • 1 cup of each mixture of romaine lettuce, baby spinach and field greens
  • 1 diced red bell pepper
  • 2-3 diced persian cucumbers
  • 1/4 cup diced/shredded chopped carrots
  • 3/4 cup fresh broccoli
  • 1/4 cup chopped green onions
  • 1 thinly sliced beet
  • 2 thinly sliced radishes
  • 4-5 Figs. (if figs are not in season as a great alternative use pear, apple or mango's)
  • 2-3 avocados
  • 1/2 lemon
  • 1 1/2 limes
  • salt, pepper, garlic salt, onion powder,
  • 1 tbsp flax oil
  • 1/2 tbsp olive oil
  • 1 freshly squeezed lemon
  • pepper to taste

Instructions

MIX IT ALL UP

  • Rinse/dry salad mixture, and set aside.
  • Dice red bell pepper, cucumber, green onion, beet, fig, radish, carrot, radish (I added sliced nectarine since it is still in season)

Prepare the Avocado

  • Slice avocado and place in bowl. Squeeze 1/2 lemon juice and 1 1/2 lime juice. Add in 1 tsp each, salt, pepper, garlic salt, onion powder, Mix well. This is where if you like your avocado sliced, diced, smashed it is your preference.

Salad Dressing

  • mix and wisk 1 tbsp flax oil, 1/2 tsp olive oil, 1 freshly squeezed lemon, pepper to taste.

Toss salad ingredients, pour salad dressing and toss again. Place avocado on top of salad. ENJOY THIS YUMMY LITE SATURDAY NITE SALAD!

  • Side Note: this is the absolute perfect salad to add your favorite salmon, chicken, veggie burger to this salad. Also trying a little toasted rosemary/olive oil bread is amazing!
