This buffalo cauliflower recipe has my heart. You can use any buffalo or spicy sauce you want and it turns out perfect every time. I have even tried it with broccoli and gotten great results. There is something about the cheesy, spicy flavor that is addicting!

Cauliflower POWER!

Yes, I am completely on board with the cauliflower trend. Cauliflower everything! Cauliflower has become the new avocado, people are using it for anything and everything: pizza, smoothies, pasta, granola, oatmeal… the list goes on. However, I love cauliflower simply roasted as a side to my meal. I could eat cauliflower at any meal because if it is cooked right, it tastes AMAZING!

Mix it up with Purple Cauliflower…

If you get bored of the basic white cauliflower, mix it up. I found purple cauliflower at the store and had to try it. It tastes the exact same as the white kind, but it is definitely more fund and pretty to make.

The sauce makes all the difference. Look for no added sugar if you can!

If you are making it with a sauce, choose wisely. Most sauces have added sugars and fillers that you don’t want to be putting in your body! Read the labels! These are some great sauces from a great brand I found at Whole Foods. Their sauce is whole 30 approved, so it has no added sugar! They are a bit on the pricey side, so this was a splurge for me, but well worth it. I got these a few months ago and they are still going strong in the fridge.

  • cauliflower
  • sauce of your choice (buffalo sauce, Sriracha, other spicy sauces )
  • nutritional yeast
  • splash of avocado oil (or preferred roasting oil) Remember: avocado is good for cooking with high heat

  • Heat oven to 400
  • Toss cauliflower, spicy sauce, oil, and nutritional yeast in a bowl. Taste some before roasting to make sure you have enough sauce and nutritional yeast to your liking.
  • Spread on a pan and roast for 30-40 minutes or until crispy and slightly charred on edges
  • Store in the fridge, if it makes it that far, or simply devour all of it because it is so good!

This is an absolute MUST on many levels of YUM. This dish is fantastic if you are hosting a party, attending a party and for meal prep weeks that you are preparing tacos, fish or chicken. A very versatile dish for you to be creative by adding some of your favorite beans, peas, fruits and vegetables. Remember to keep the base ingredients of cilantro, lime, legume, and fruit. Here is the recipe for the salsa pictured.

  • 1 bunch cilantro rinse, dry and put leaves in a cup to chop
  • 1 15oz can black eye peas I prefer organic when available
  • 1 15oz can of black beans I prefer organic when available
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 1-2 mango diced
  • 5 roma tomatoes diced can substitute with can fire roasted tomatoes or rotel tomatoes
  • 1 cup red cabbage chopped
  • 1 cup fire roasted corn substitute with white shoepeg corn, fresh corn off the cob. In this recipe I used frozen, Fire Roasted corn from Trader Joes
  • 1 jalapeno diced Remember the seeds are where the heat is when dicing your jalapeno
  • 1-2 lime juice freshly squeezed
  • salt and pepper to taste
  • garnish with sliced avocado

  • Open all items in a can, rinse and let drain.
  • Rinse cilantro thoroughly and pat dry. I prefer to pick the cilantro leaves off the stem and put into a cup, using my cooking shears to chop my cilantro.
  • Start dicing your bell peppers, tomatoes, jalapeno, mango, and cabbage.
  • Combine all ingredients and stir.
  • Garnish with thin slices of avocado
  • Serve with tortilla chips, over rice, with your taco, garnish your chicken or fish dishes.
    So easy to spice up any dish.

This is not a detox!! 

I do not believe in the “detox” benefits of juicing. We were not meant to skip meals and simply drink juice. Sure, if you do this you will see results, but at what cost? If I ever skip a meal, I end up HANGRY and then I will over eat later on because of this incurable hunger.

There are benefits to adding in a juice during the day as a part of your meal or snack. Juices contain great vitamins and nutrients that you may not be getting in your diet. However, be wary of store bought juices. Store bought juices are often loaded with added sugars that are not necessary. Sometimes the sugar is from fruit, but this is still not a great way to get these fruit sugars. Would you ever find yourself eating a whole apple, an orange, a three beets, a banana, and a cucumber at one time? Probably not. This is why juices (and smoothies) from the store can be misleading. Look for juices primarily made of vegetables and maybe one fruit. A great juice could have an ingredient list like this: kale, spinach, cucumber, apple, lemon, ginger. This is simple, nutritious, and doesn’t contain an unreasonable amount of foods.

This recipe was inspired my my momma! She loves getting lemonades and fun new drinks at restaurants like Cava and Yafo in Charlotte, NC. So, I decided to make a cleaner homemade version of beet lemonade (which they recently had as a drink option at Cava). This is a great refreshing drink to sip on in the afternoon that will not leave you feeling jittery from sugars. Plus, the ginger and lemon are great for boosting your immune system!

  • 1 cooked beet I used LoveBeets I purchased at Costco
  • 2 freshly squeezed lemons
  • 1/4 tbsp fresh ginger
  • 1 tbsp honey Our favorite it Local Honey. In Charlotte we love Ritter Farms Honey. Available at Whole Foods
  • 4 cups water

Instructions

  • Add all ingredients to a blender and blend for roughly 4 minutesPour into a jar and store in the refrigerator 
  • Tip: if you have a nut-milk bag or a strainer, you can strain the juice to get some of the ginger pulp out. However, I did not do this and the ginger was not terribly overwhelming. If you don't strain expect some ginger strands!!

Meal Prep, I never knew the depth of meaning behind the word Meal Prep!   Meal Prep is your and your families most valuable task to your forever nutrition. Let me just tell you how much meal prepping has saved me and my family from slipping
