SURE IS SWEET – POTATO PIE

 

A pie a day keeps the doctor away?

It was around thanksgiving when I stumbled upon this idea. I found myself at home with my family prepping for the big meal. However, I knew I would not want any sweets that my family was making: cheesecake, cookies, cakes, cupcakes… All of these things are delicious, but I know my body and I know that it doesn’t need that much sugar. The desserts on the dessert table were full of processed sugar and ingredients that I might not know. Not that any of these things in moderation are bad for you to eat. If you enjoy a sweet like that now and then go for it! I simply know my body and prefer the more natural desserts filled with ingredients I know are good for me. Even if I have some added sugar in my dessert, it comes from less processed sources like honey or maple syrup

So I made a plan to create a dessert I would enjoy and others could enjoy as well. What better thing than a Sweet Potato Pie. This pie turned out amazing! It was sweet enough for me, some people found it not sweet, but my taste buds are very sugar sensitive. Eating this pie made me feel very festive and happy! I hope you try out this recipe and find it as enjoyable as I did!

Crust

  • 1 cup pitted dates
  • 1 cup pecans
  • splash vanilla
  • dash sea salt

Filling

  • 2 sweet potatoes medium size, steamed and peeled
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup my favorite Kirkland Organic Maple Syrup
  • 1 tbsp grated ginger
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp sea salt

In a blender, process the pecans, salt, and dates for the crust until well combined

  • Mash the crust dough into a pie dish and place in the refrigerator
  • Combine filling ingredients into a blender. Mix until smooth and well incorporated.
  • Pour filling into chilled pie crust and refrigerate for at least 2 hours. This allows the filling to firm up.
  • Serve with whipped cream or coconut whipped cream.

Store

  • Store in the refrigerator if there are any left overs.
