CHEESY BUFFALO CAULIFLOWER

This buffalo cauliflower recipe has my heart. You can use any buffalo or spicy sauce you want and it turns out perfect every time. I have even tried it with broccoli and gotten great results. There is something about the cheesy, spicy flavor that is addicting!
Yes, I am completely on board with the cauliflower trend. Cauliflower everything! Cauliflower has become the new avocado, people are using it for anything and everything: pizza, smoothies, pasta, granola, oatmeal… the list goes on. However, I love cauliflower simply roasted as a side to my meal. I could eat cauliflower at any meal because if it is cooked right, it tastes AMAZING!
If you get bored of the basic white cauliflower, mix it up. I found purple cauliflower at the store and had to try it. It tastes the exact same as the white kind, but it is definitely more fund and pretty to make.
If you are making it with a sauce, choose wisely. Most sauces have added sugars and fillers that you don’t want to be putting in your body! Read the labels! These are some great sauces from a great brand I found at Whole Foods. Their sauce is whole 30 approved, so it has no added sugar! They are a bit on the pricey side, so this was a splurge for me, but well worth it. I got these a few months ago and they are still going strong in the fridge.

- cauliflower
- sauce of your choice (buffalo sauce, Sriracha, other spicy sauces )
- nutritional yeast
- splash of avocado oil (or preferred roasting oil) Remember: avocado is good for cooking with high heat

- Heat oven to 400
- Toss cauliflower, spicy sauce, oil, and nutritional yeast in a bowl. Taste some before roasting to make sure you have enough sauce and nutritional yeast to your liking.
- Spread on a pan and roast for 30-40 minutes or until crispy and slightly charred on edges
- Store in the fridge, if it makes it that far, or simply devour all of it because it is so good!
