SUMMER OKRA CHICKPEA ARUGULA SALAD WITH LEMON VINAIGRETTE

Ingredients

INGREDIENTS

  • 3 cups fresh okra
  • 1 16oz can organic chickpeas rinse and drain
  • 6 thin slices of red onion
  • 1 container arugula salad mix rinse and drain
  • 1-2 freshly squeezed lemon
  • 1/4 cup extra virgin olive oil

Instructions

INSTRUCTIONS:

  • Line baking pan with tinfoil and rub small amount of olive oil on to coat.
  • Rinse okra and pat dry. Cut okra in half lengthwise and spread onto lightly greased baking pan. Toss halved okra lightly with olive oil. About 1tbsp to all.
  • Bake okra in oven at 400 until lightly brown and I like mine a little crispy.
  • Chickpeas. 2 ways here. You can keep them plain and top on salad. OR.. In a skillet pour 1 1/2 tsp olive oil. Let heat for a minute. Add your chickpeas, salt, pepper, a pinch of red pepper, garlic salt, onion powder to taste. Stir chickpeas until crispy. (you can do this in the oven also) Squeeze 1/2 lemon juice over chickpeas and keep on heat for 30 more sec. Remove from burner and let cool before adding them to your salad.
  • Combine 1 - 2 lemon juice and 1/4 cup olive oil. Whisk together. Add salt and pepper to taste. Sometimes I add about 1 tsp of apple cider vinegar and 1 tsp honey for a little different taste.
  • Now put your arugula in your salad bowl, top with red onion slices, chickpeas and top with okra. Drizzle lemon vinaigrette over top.

ENDLESS OPTIONS:

  • To make this a main course meal, try adding grilled chicken, or salmon. Vegan option add a quinoa burger or tofu ( recommend seasoning the tofu with the chickpeas ).
  • Add diced pears.
  • Add candy or toasted pecans.
  • Add blue vein cheese or goat cheese.

Okay this is totally a no brainer!  Like me I am sure you will say “why did I not think of that before”!  You know how at the end of the week you start to notice that it is time to USE IT or LOSE IT (in the trash or compost pile) with some of your spinach, vegetables, fruit etc. Don’t throw it out or make something you are really not in the mood for just to not let it go to waste.  Instead.. do that…. do not let it go to waste and make your INDIVIDUAL SMOOTHIE BAGS!  Yes, yes of course it makes sense to you.  This is exactly what you purchase at the store when you purchase the pre-packaged smoothie packs.  Well you probably already have everything you need and more.

Start by getting your ziploc bag(s) out and ready.  Now get all of the items out of your refrigerator, like berries, beets, cucumbers, sweet potatoes, squash, zucchini, spinach, kale, chia seed, flax seed, hemp seed, matcha powder.  Whatever you want to put in them.  Now grab a small handful of what you want in your smoothie, put it in the ziploc bag and seal.  I do recommend adding a label of some sort.  The label lets anyone in your house who is looking for a quick lift me up in the morning or between meals know what is inside but especially because it lets them know what they need to add like, WATER, ALMOND MILK,  or BANANA MILK (my favorite). I used painters tape to write the ingredients and what needs to be added when you put it in the blender.

 

So when you are making healthy smoothie using one of your pre-made freezer smoothie bags, you will simply add the liquid ingredient with the baggie contents and blend!

  • 1 banana
  • 2 tbsp protein powder (plant based, whey, whatever)
  • 1/2 cup strawberries
  • 1 cup water
  • 1/2 cup ice

  • If making this fresh, simply combine and blend the first 4 ingredients.
    Once blended. You will know if you need to add a little more water or not. I like to add about 1/2 cup ice and blend. This makes it a little more frozen and smoothie consistency.
