Fresh From My Garden!!

This summer salad is always a favorite at my house, even when it is not fresh from our garden!  We make this all of the time, and in big batches. Since one of my kids has a tomato allergy I simply make a different batch without tomatoes and it is still just as delicious!  We use this for meal prep and make ahead dishes.  Great for school lunches, great fresh cool taste. Experiment by adding a few mint leaves, feta cheese, olives, fresh dill, add it to your chicken sandwich with fresh tzatziki sauce.  Yum, Yum!

  • 1-2 cucumbers
  • 2 roma tomatoes
  • 3 tbsp white vinegar
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • 1/4 cup sliced or diced red onion

  • I like to cut my cucumber slices a little more on the thicker side. This will be your preference. Here is how I cut mine.
  • Cut your cucumber in half, lengthwise. Take your half of cucumber and half it again. Now, slice the cucumber.
  • Dice your tomato. I like to use Roma or cherry tomato.
  • Thinly slice red onion
  • Combine your cucumber, tomato, and red onion in a bowl and add the remaining ingredients.
  • Mix together and refrigerate for 20-30 min to chill before serving.

  • 1 cup rolled oats
  • 1-2 tbsp greek yogurt Remember to watch liquid consistency when adding yogurt with milk and water. Liquids should just cover the top of your oats.
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1 tbsp protein powder
  • 1 tbsp blended spinach
  • 1/4 tsp vanilla extract
