KICK OF COFFEE GRANOLA

Yes, you saw that right… COFFEE granola. Can’t get enough!
My love for coffee runs deep. I started drinking coffee when I got to college and I have not stopped since. I love a cup in the morning or afternoon, or honestly any time in between. You can find me at Starbuck, Dunkin’, or Caribou. Usually I just make coffee at home to save money, so I have bags of coffee grounds laying around.
Seeing all these grounds in my pantry gave me the idea to make coffee granola. I have managed to combine my two favorite things into one amazing breakfast topper. This recipe gives me the kick I need to get out the door! Breakfast is my favorite meal of the day, so I am always experimenting with new granola recipes.
KICK OF COFFEE GRANOLA

- 3 cups rolled oats
- 1 cup pumpkin seeds in shell
- 1/2 cup sunflower seeds
- 1/2 cup sliced almonds
- 1/2 cup ground coffee Try something new here.... I used peppermint flavor
- 1 tbsp vanilla extract
- 3 tbsp raw honey
- 2 tbsp avocado oil
- pinch sea salt

- Heat oven to 350Combine all ingredients in a bowl and mix well. Make sure there are no honey clumps and everything is evenly distributedSpread on baking sheet and bake for 20-30 minutes or until golden brown. Watch carefully to make sure it doesn't burn!Store in air tight container for a quick yogurt topper!
