Saturday Nite Lite Salad with Figs, Avocado, Flax Oil Salad Dressing

Ingredients
Salad Ingredients
- 1 cup of each mixture of romaine lettuce, baby spinach and field greens
- 1 diced red bell pepper
- 2-3 diced persian cucumbers
- 1/4 cup diced/shredded chopped carrots
- 3/4 cup fresh broccoli
- 1/4 cup chopped green onions
- 1 thinly sliced beet
- 2 thinly sliced radishes
- 4-5 Figs. (if figs are not in season as a great alternative use pear, apple or mango's)
- 2-3 avocados
- 1/2 lemon
- 1 1/2 limes
- salt, pepper, garlic salt, onion powder,
- 1 tbsp flax oil
- 1/2 tbsp olive oil
- 1 freshly squeezed lemon
- pepper to taste
Instructions
MIX IT ALL UP
- Rinse/dry salad mixture, and set aside.
- Dice red bell pepper, cucumber, green onion, beet, fig, radish, carrot, radish (I added sliced nectarine since it is still in season)
Prepare the Avocado
- Slice avocado and place in bowl. Squeeze 1/2 lemon juice and 1 1/2 lime juice. Add in 1 tsp each, salt, pepper, garlic salt, onion powder, Mix well. This is where if you like your avocado sliced, diced, smashed it is your preference.
Salad Dressing
- mix and wisk 1 tbsp flax oil, 1/2 tsp olive oil, 1 freshly squeezed lemon, pepper to taste.
Toss salad ingredients, pour salad dressing and toss again. Place avocado on top of salad. ENJOY THIS YUMMY LITE SATURDAY NITE SALAD!
- Side Note: this is the absolute perfect salad to add your favorite salmon, chicken, veggie burger to this salad. Also trying a little toasted rosemary/olive oil bread is amazing!
