BLISSFUL BLUEBERRY BALLS

These are one of my all time favorite desserts to make. I am a huge fan of ice cream and refreshing desserts. Treats like frozen grapes and frozen berries are a must have in my freezer for that late night study sweet tooth. These combine all of the qualities of those into one ball. The blueberry gives sweetness and a fruity flavor. The coconut adds some satisfying fat and a nice texture element. And the lemon is the cherry on top. A splash of lemon combines so well with the blueberry that you get the tang and the sweet.

Cue me devouring all of these…

Be warned… you will fall in love.

Switch it up with shredded coconut instead of coconut flour!

I have not made these in a while, and writing this is making me want to whip up a batch right now. I think I might go do that…. I will finish the recipe first so all of you can share in my love for this treat!

  • 1 cup frozen blueberries
  • 1 cup cashews (unsalted)
  • 1 cup almond flour can substitute with coconut or oat flour
  • 1 cup dates pitted and soaked in water for about 30 minutes
  • 2 small lemons or 1 large lemon juice
  • 1 tsp vanilla
  • pinch salt, coconut flour and/or coconut flakes for rolling

  • Prepare a pan with tin foil and a bowl with coconut four or coconut flakes.
  • Blend frozen blueberries, cashes, almond flour, dates, lemon juice, vanilla, and salt until well combined.
  • Place blended dough in the fridge to firm up for about 30 minutes.
  • Scoop out mixture and roll into balls.
  • Drop balls in the coconut flour/flakes and roll to cover.
  • Place completed balls on tray and place in the freezer to firm
  • Once firm you can put them in a container or bag and store in the freezer
  • You may need to let them sit for a minute before eating directly from the freezer.
