SWEET POTATO W/ SPICED UP AVOCADO OVER HONEY DRIZZLED ROASTED CAULIFLOWER

Ingredients
INGREDIENTS:
- 2-3 sweet potatoes your choice to peel or not
- 1 head cauliflower
- 3 avocados
- 2 fresh squeeze lime juice
- 3 tsp extra virgin olive oil
- salt, pepper, garlic salt, onion powder, chili pepper flakes
- 1 tbsp honey
Instructions
INSTRUCTIONS:
- Preheat oven to 425. Line and drizzle baking sheet pan with tinfoil and 1/2 tsp olive oil.
- Wash sweet potato, and slice about 1/3 thickness. In a small dish put your 3 tsp olive oil. Lightly, brush sweet potato with olive oil on both sides. Place on one side of baking sheet pan.
- Break apart or slice your cauliflower into bite size pieces. Place on baking sheet pan and lightly brush with olive oil.
- Bake at 425 for about 15 min. Turn sweet potato when golden on one side. Toss cauliflower to brown on sides.
- Now that the sweet potato and cauliflower are in the oven let's get the avocado ready.
- Slice avocados and scoop out into a dish.
- Squeeze lime juice over avocados.
- Season with salt, pepper, onion powder, garlic salt and 2-3 pinches of red pepper flakes. Now mix, smash, slice, fold, however you like to mix it all up.
- Once the sweet potato and cauliflower are tender to your liking, remove from oven. If you have kosher salt I like to add a pinch over the cauliflower when I take it out of the oven.
- Plate your cauliflower with sweet potato on top and a spoonful of avocado mixture.
- NOW.... drizzle honey over top of meal.
- So quick, So delicious, So healthy, So filing!!
ENDLESS OPTOINS:
- Add a piece of grilled salmon.
- Use red pepper or chipotle pepper instead of red pepper flakes.
