Peach Cobbler Granola

Ok…. We are heading into peach season, so you need to be prepared. For as long as I can remember, my family would stop at McLeod Farms in South Carolina on the way home from the beach for the BEST fresh peaches. My personal favorite for a really sweet peach is the free stone yellow variety. However, I also enjoy snacking on white flesh peaches.

For any peach recipe, I would suggest going for the yellow variety because they tend to be sweeter. If you are using peaches for baking, make sure they are super ripe. I wait until they are just on the verge of going bad to use fresh peaches in recipes. So, if there are any left after a week or so…. get into the kitchen and start baking!!

I almost exclusively eat homemade granola. Being able to control what is in my granola is important. Store bought granola tends to have crazy amounts of sugar. If I am enjoying a yogurt bowl in the morning, I prefer not to have a rush of sugar unloaded on me right when I wake up. So, by making my own granola I can choose to use maple syrup and fruit to sweeten it just enough. These recipes will last me for a few weeks (I don’t necessarily eat it every day). Homemade granola is way easier to make than you think, so don’t be intimidated!!

Peach Cobbler Granola

Simple seasonal granola that is perfect for summer!

Ingredients

  • 2 ½ cups rolled oats
  • 2 ½ cups puffed rice
  • 2 cups chopped nuts I used walnuts and sliced almonds
  • 3 tbsp chia seeds
  • 1 tsp salt
  • 1 ½ tbsp cinnamon
  • 4 ripe peaches
  • 2 tbsp maple syrup more or less depending on your sweetness preference
  • 1 tbsp olive oil
  • 1 tsp vanilla

Instructions

  • preheat oven to 300°

Peach mash

  • cut up peaches into small cunks and place in a small pot
  • heat over med-high heat to reduce the peaches
  • while they are heating, mash the peaches with a fork or a masher
  • once they are well reduced (a lot of liquid is gone) remove from heat and mash some more to remove as many large chunks as possible
  • add vanilla and maple syrup to the peach mash

Combining

  • combine dry ingredients in a large mixing bowl (oats, puffed rice, nuts, chia seeds, salt, cinnamon)
  • add olive oil to the dry ingredients
  • pour reduced peach preserve over the mixture
  • spread peach mixture into dry ingredients thoroughly. You will need to use two spoons to combing the peach and the dry ingredients. Try to get an even spread, there will be some chunks with peach preserve but that is okay.
  • once combined, spread the granola evenly on a baking sheet
  • bake the granola for 40-45 minutes at 300°. Remove and toss every 15 minutes. Bake until golden brown!!

Notes

*Once it is completely cooled, you can store in a container in the fridge to preserve freshness!

Ingredients

  • 1-2 1-2 fresh squeezed lemons
  • 2 tbsp extra virgin olive oil
  • Salt/Pepper to taste

Instructions

Instructions

  • Combine ingredients in a cup, bowl, your choice.
  • Stir. Pour over salad.
  • Adjust volume amounts based on how much lettuce you have. Do NOT drown your salad with the dressing it will make it soggy.
  • Store any unused dressing or if you made extra in a small mason jar and refrigerate. Should last for the week. You will need to let it sit at room temp before using to stir and mix the dressing.
  • Use also as a quick marinade.
