Okay, Let’s Talk!

This is a side dish I prepare in LARGE quantity, because I use it with Taco Tuesday, topped over chicken/fish and rice, nachos, quick snack, or Ceviche! You name it, we love to add this to our dishes.

Prepare this dish with the basic ingredients and add the optional ingredients to your taste. The basic recipe is great because it helped me introduce vegetables like cucumbers, red bell peppers and red onion to my kids and they still had the natural sweet and tangy taste from the mango’s and small amount of lime juice. This is why it was great to start basic and then add new fun ingredients depending on what I topping the mango chutney with.

Now keep in mind… my family will go through 10 mango’s, cucumbers, and bell peppers by mid-week when I prepare this dish, a cucumber salad, homemade hummus with veggies already chopped up! A key component is SHOP AND CHOP! Go back to the meal plan page and re-read why it is important to plan, shop and chop! When I shop and chop, we all eat healthier around the house. One of our goals I worked to put in place when my kids were younger was/still is: when you are hungry go to the fridge first to eat then you can go to the pantry. The reason behind this is, when any kid comes home from school or has been outside playing all day, they are a different kind of HUNGRY BEAST! You know what I am talking about! I mean, I was like where the heck did my kid go??? Even when they had plenty, plenty of food packed for their lunch. I learned to remember, as this applies to adults and myself as well, you never know what someone has been through in a day…. maybe they had plenty of time to eat lunch (never), the stress that we all experience daily whether good or bad, just be….. just be there and be available. Being available with healthy snacks already prepped helps everyone’s blood sugar stabilize, mental clarity and new energy from fueling your body with clean, no preservatives added food rather than processed with a 20 year expiration date! Take small steps…..you can do this.

  • 4 mango diced
  • 3 persian cucumber diced any cucumber is fine, but I prefer seedless and burpless, more firm cucumbers
  • 2 red bell peppers diced
  • 1 freshly squeezed lime juice add 2 if making large batch
  • salt and pepper to taste

Optional Ingredients

  • 1/4 cup pomegranate seeds
  • 1/3 - 1/2 cup cilantro leaves chopped
  • 1 avocado sliced
  • 1 jalapeno diced
  • 1/3 cup watermelon when in season

Thinner? Not literally, but they are cleaner and better for you!

EatingBirdFood hit the target with these. I only made small adjustments to this one because they were already super amazing. If you have picky taste testers, they may enjoy a lighter chocolate coating, but I enjoy very dark chocolate, so 85% was good for me.

The texture is spot on! Biting into the cookie took me back to my childhood. Thin Mints were by far my favorite Girl Scout cookie growing up. I was always so excited when the Girl Scouts came to our door every year because I would get cookies again!! Now I can have that same feeling, but with a more natural alternative. These still have sugar in the form of maple syrup, but they are eons better for your body than the original. Every ingredient is natural, so you know exactly what you are eating.

  • 1 cup almond flour
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp peppermint extract
  • pinch of salt

Coating

  • 1 cup 85% dark chocolate
  • 2 tsp coconut oil
  • 1/2 tsp peppermint extract

  • Pre-Heat oven to 350 degrees
  • Combine all cookie ingredients in a bowl and mix well. Make sure there are no flour clumps remaining.
  • Place mixture in the fridge for 15 minutes to chill.
  • Prepare a baking sheet with parchment while they chill.
  • Place chilled dough on parchment in a big ball. Put another piece of parchment on top and flatten with rolling pin or fingers. I used a glass and rolled it like a rolling pin. the cookies should be about 1/4 inch thick. Use a small glass or circular object to cut into cookie shape.
  • Place cookies on a baking tray. Bake for 13 minutes.
  • Remove and let cook completely before adding coating.
  • Melt the coating ingredients in the microwave in 30 second intervals.
  • Dip cooled cookies in the coating and allow excess to drip off before placing on a parchment lined tray.
  • Place in the fridge to set the chocolate.
  • Store in the fridge in a container and enjoy! They won't last long!

AVOCADO TOMATO TOAST WITH BALSAMIC DRIZZLE

  • 1 avocado diced
  • 2 tbsp freshly squeezed lime juice
  • salt and pepper to taste
  • 1-2 diced roma tomato

Balsamic Dressing Ingredients

  • 1/2 cup EVOO
  • 1/2 cup chopped parsley
  • 1 tbsp mustard I like stone ground mustard
  • 3/4 cup balsamic vinegar use a good quality
  • 1 tbsp worcestershire sauce
  • 1 tsp chopped garlic
  • 1/4 cup honey

  • Toast a piece of your favorite bread and set aside.
  • Prepare the avocado mixture and set aside.
  • Prepare Balsamic Vinegar dressing/drizzle, set aside.
  • Dice your roma tomato

Assemble

  • On your toast, add avocado, tomato, and then the balsamic drizzle. Add fresh basil leaves if you have any for topping

Anyone that knows me knows that, I do not eat to just eat. I eat because I love flavor, texture, complexity and I want to eat real food that is minimally processed, natural and few ingredients. One reason why I am like a kid in a candy store at our local “farmers market”! Fresh, locally grown, fresh basil, fresh parsley…. makes me hungry and sparks my mind for creating something new! This is the most simple, literally something you just whipped together! Combine your avocado, diced tomato’s and drizzle your balsamic dressing over your favorite toasted bread or gluten free bread. My favorite gluten free bread is Be Free, Gluten Free Sandwich Bread. I have been gluten free for over 7 years and this is by far my favorite gluten free bread since giving up bread because most gluten free bread taste like cardboard.
